Well I got the meatballs all made up this morning and was going to make up an italian tomato sauce for them to simmer in all day. (crock pot). Out of tomato sauce! So, thinking it'll be one of those open a can of Beef Pepper Oriental, Rice and Chow Mein noodle nights.

I absolutely agree - meatloaf does seem to taste better the next day.

salmonwiches (sorta like tuna salad, only with salmon, and you dip them in eggs and grill them on the stove)

asparagus

bread

portabella mushrooms with onions (cooked in red wine)

and cantelope
