I was one for 2.5 years about 7 years ago. I started because I was at a Catholic boarding school and we had to give something up for lent and I'm a meat fanatic, so I gave that up (after being told I could never go without meat) and I stayed with it until someone took me to a burger joint and bought me a chicken sammich...

I was actually doing pretty well..not eating meat and such for almost a month..then I found out that I was eating for two and gave it up. I plan on at least restricting the meat portion of my diet after the baby is born to lose all the lovely pregnancy weight. So, if you have good veggie recipies, go for it.

this is my most favorite baked bean recipe. i usually use canned pinto or red beans instead of the dried ones (takes less time) and make it in my crockpot - they still turn out awesomely delicious:

molasses baked beans (serves 8-10):

2 1/2 cups (1 pound) dried beans, rinsed and picked over
2 tablespoons vegetable oil
1 yellow onion, chopped
3 garlic cloves, minced
2 tablespoons dry mustard
1 cup ketchup
1 teaspoon salt
2 tablespoons worcestershire sauce
1/2-3/4 cup molasses
1 cup canned tomato sauce
2-3 tablespoons cider vinegar or red wine vinegar
freshly ground black pepper

soak the beans overnight in water to cover by several inches. drain. place the drained beans in a heavy pot and add water to cover by 3-4 inches. bring to a boil, cover partially, reduce the heat to medium-low, and simmer until tender, 1-1 1/2 hours; the timing will depend upon the bean variety. check after 30 minutes.

meanwhile, in a skillet over medium-high heat, warm the oil. add the onion and garlic and saute until softened, about 5 minutes. stir in the mustard and saute briefly. stir in all the remaining ingredients, including pepper to taste. cook a couple of minutes. add the onion mixture to the beans and stir well. add water if necessary to make sure the beans are covered by a couple inches of liquid.

preheat oven to 250 degrees f. pour the beans into an ovenproof caserole. cover and bake until thickened and syrupy, about four hours. check occasionally to see if more liquid is needed. taste for seasoning about halfway through. add more molasses, pepper, vinegar, or salt as you like.
